How to make liver pancake rolls

To prepare the rolls, I took a fresh liver with a smooth and shiny surface. I washed it under running water.


Then, having cut out the veins from the liver, I passed it through a meat grinder with a special fine mesh. She poured milk into the ground liver and stirred it. Then I added flour in small portions, mixed thoroughly, breaking lumps of flour. Beat the eggs with a whisk, add them to the liver mixture, mix well. After salt and pepper the mixture, I left it to stand for about 20 minutes. Then I added sunflower oil to the mixture. While the liver dough is "resting" I prepared the filling for the rolls.


Passed the onion to a transparent color in sunflower oil.


I poured grated carrots into the fried onions. Stirring vegetables continuously, fry them until golden brown. She quickly removed the pan from the heat, poured the fried onions and carrots into a clean bowl, set it to cool.


I added finely chopped (hard-boiled) eggs to the cooled vegetables. I filled the filling with low-fat mayonnaise.


I added finely chopped dill to the filling.

Next stage. She started making rolls of liver pancakes. You need to fry them, like ordinary pancakes, but preferably in a small frying pan. Pouring a scoop of liver dough into a frying pan oiled with vegetable oil, she turned it in her hand so that the dough spreads over the entire surface. The liver dough turns out to be a little thicker than a regular pancake dough, so you need to help it with a scoop to evenly distribute it throughout the pan.

The result is ten liver pancakes.


For each pancake, I cut the edges on opposite sides to make the rolls neat. Then, putting the filling on the pancake, I fold it carefully, so as not to break it, with a roll. Thanks to the large number of eggs in the dough, the pancakes are pliable and do not break when curled.
