Step 1: prepare and boil the pork heart.

We wash the pork heart under cold running water and put it on a cutting board.

When the liquid boils, reduce the temperature of the stove to an average level, use a slotted spoon to remove noise from the surface of the water, cover the pan with a lid so that a gap remains and cook the heart until fully cooked for 2 - 2.5 hours.


After the required time has elapsed, we check the readiness of the offal with a fork, insert its teeth into one of the halves of the heart, if they enter under pressure, then we let the heart cook until soft, and if the teeth enter smoothly without obstacles, then the ingredient is ready. Helping ourselves with the same slotted spoon, remove the heart from the pan, transfer it to a deep bowl and let it cool down to room temperature.


Then we put it on a cutting board and cut into long strips, cubes or pieces, up to 1 - 1.5 centimeters... Transfer the chopped heart back to a deep bowl.

Step 2: prepare the vegetables.



During the cooling of the offal, in order not to waste precious time, you can prepare vegetables. Use a knife to peel the onions and carrots, rinse them under cold running water to remove sand and other contaminants and dry them with paper kitchen towels to remove excess liquid. Then we put the onion on a cutting board, cut it into cubes or strips up to 5 millimeters thick and transfer the slices to a deep plate. Grate the carrots on a medium or coarse grater in a separate deep plate.

Step 3: fry the flour.



Now turn on the 2 burners on the stove to the middle level. We put 1 frying pan on each of them, pour 2 - 3 tablespoons of vegetable oil into one of them. We just warm up the second one. Pour 3 tablespoons of wheat flour into a hot container, in which there is no fat, and fry it, stirring with a kitchen spatula until golden brown. This process will take no more than 1 - 2 minutes.


After that, pour 2 cups of pure distilled water into the same pan and mix until a homogeneous consistency without lumps. Let the water boil 1 - 2 minutes and thicken a little. Then immediately set the pan aside, the flour sauce is ready.

Step 4: stew vegetables.



Simultaneously with hot flour, we stew vegetables. Throw in hot fat, chopped onions and, stirring it with a clean kitchen spatula, fry until medium soft and light golden crust for 2 - 3 minutes... After that we add carrots to it and simmer them together for another 2 minutes until the carrots are soft. Then we throw chopped garlic to the vegetables and give it the opportunity to dissolve its aroma for 1 minute.

Step 5: we bring the dish to full readiness.



When all the vegetables have reached the desired texture, become soft and golden, we screw the temperature of the stove to a level between low and medium. Introduce pieces of the boiled heart into the same pan, salt and black pepper to taste. Mix everything with a kitchen spatula, and fry for 2 - 3 minutes... Then add flour sauce to them, re-mix all the ingredients of the dish, taste and, if necessary, add more spices and salt. Then cover the pan with a lid and simmer the heart in gravy 5 - 7 minutes... After the required time has elapsed, turn off the stove, let the fragrant mixture brew 6 - 7 minutes, put the pieces of heart on plates, pour over the gravy and serve with your favorite side dish.
