Cottage cheese goes well with various berries and fruits, which give it additional taste and aroma. At the height of summer, when raspberries ripen, do not forget to pamper your family with the most delicate pie with raspberries and cottage cheese.

Secrets of making delicious raspberry cottage cheese pie

For the pie, it is best to take fresh raspberries, but frozen ones are also suitable, but they need to be gradually defrosted to room temperature.

If you make a cake impregnation based on condensed milk, a milky aroma will appear, which can drown out the raspberry aroma.

To make the dough lighter and airier, you can use vegetable oil instead of butter.

Since raspberries are a very delicate and fastidious berry, they should be washed immediately before cooking and stored in the refrigerator for no more than two days. Frozen berries should only be thawed at room temperature, otherwise the integrity of the berries may be damaged.

When baking, raspberries do not need to be mixed with the dough; it is better to lay them out in a neat layer, otherwise they will release juice and the entire dough will change color.

How to cook with photos step by step

Turn on the oven (180C)
Break the chicken eggs (yellow and white together) into a mixer bowl and pour in granulated sugar.

Beat on high speed for 5 minutes until sugar dissolves. The mass will become light and airy.

Add cottage cheese to the egg mixture. If you want to get a homogeneous dough consistency without grains, rub the cottage cheese through a sieve. I left the cottage cheese as is. Mix the new ingredient with a mixer for 1 minute.

Pour in the milk and mix everything again with a mixer.

Sift the flour and mix with baking powder (it can be replaced with baking soda). Pour into a bowl in small portions, stirring constantly with a spatula rather than a mixer.

The finished curd dough for raspberry pie has the consistency of thick sour cream with grains. Now you can add the oil component to the dough: melted butter 70 g or odorless sunflower oil - 50 ml. The choice is yours. Mix the butter into the dough with a spatula.

Place the springform pan in a shirt: grease with butter and sprinkle with flour.

Place half of the curd dough into the mold. Distribute the dough evenly by shaking it from side to side.

Scatter raspberries onto the first layer of dough in random order. As practice has shown, the number of berries should be small, otherwise all the raspberries will slide down during baking.

Second layer of dough and some more raspberries on top. The berries do not need to be buried in the dough.

Bake in a preheated oven for 45-50 minutes at 180C until dry. The finished pie with raspberries and cottage cheese will rise significantly, but when it comes into contact with room temperature, it will settle a little - this is not critical.

Release the baked goods from the mold, cool slightly, and then dust with powdered sugar and decorate with fresh raspberries. Mint and lemon balm are suitable as greens.

Pie with raspberries and cottage cheese is easy to cut into pieces. The dough has a moist texture. But during baking, my berries slid to the very bottom of the pie. This did not affect the taste in any way - it was still very tasty!
Serve a piece of aromatic raspberry pie with a cup of milk or kefir. Healthy, tasty and beautiful. Cook and eat for your health!
