The wonderful aroma of simple and tasty pastries left no one indifferent, the whole family gathered for Sunday tea. It takes little time to prepare the dessert, and making charlotte is simple and even a beginner can do, which is why it has won people's love.

Each housewife has her own secret on how to prepare charlotte with apples. There are thousands of charlotte recipes. Sweet pie can be baked not only with apples, but also with other fillings. Instead of fruit, they put berries in it - cranberries, currants; apricots, plums or pears would be good as a filling. If you love chocolate, you can melt the bar and pour the fudge over the top of the pie, or put a cocoa-based filling in the middle.

A special advantage of charlotte is its versatility, as well as the ability to adapt the pie to a wide variety of fillings that are available.

Classic recipe

Charlotte with apples in the oven is prepared on the basis of biscuit dough without adding soda or baking powder. The splendor of the pie is achieved by thoroughly beating the ingredients.

For the test you will need:

  • 4-5 pieces of eggs;
  • A glass of granulated sugar;
  • A glass of wheat flour.
  • For the filling:
  • 4-5 pieces of apples;
  • A teaspoon of lemon juice or citric acid (1/2 teaspoon).

The filling is prepared from apples of any variety, but the Antonovka variety is considered ideal in all respects.

Stages of preparing charlotte

  1. Apples should be peeled and cut into thin slices; the core and seeds should be removed. Some people prefer a more delicate taste of fruit, in which case they can be stewed a little in a frying pan with oil.

  2. To prevent the apples from darkening, they are poured with lemon juice or sprinkled with citric acid and covered with a lid. If you want to give the pie a more refined taste, you can sprinkle the fruit with cinnamon or pour a glass of cognac (brandy).
  3. Beat the eggs into a fluffy foam; it is better to do this at high speed using a mixer. Gradually add granulated sugar into the air mass without stopping whipping. The sugar should completely dissolve.

  4. Add the sifted flour little by little, add a pinch of salt and knead the dough at low speed. You need to be especially careful when combining the egg mass with flour; it is the bubbles of the egg mass that help the dough rise well.
  5. Preheat the oven to 180°.
  6. Prepare a shallow, wide mold, grease it with any oil and sprinkle with flour.
  7. Place apples on the bottom of the mold and pour dough on top. Some housewives simply add apples to the dough, and the finished mixture is poured onto the bottom of the mold.

  8. Bake for 25-30 minutes until golden brown.
  9. Do not open the oven door to prevent the dough from falling.
  10. You can check the readiness of the pie simply with a toothpick or skewer. The wooden stick should come out dry. If there are droplets of dough remaining on it, you need to continue baking.
  11. The finished pie is sprinkled with powdered sugar.

Nuts, dried fruits, poppy seeds, raisins, lemon or orange zest, and aromatic herbs go well with the dough. You can add any one component to the charlotte, or you can prepare a unique mixture of different ingredients. Cognac or brandy makes apples soft, especially if they are stewed a little in alcohol. In this case, charlotte with apples will turn out very tender, similar to a soufflé.

To achieve a fluffy foam, it is advisable to remove the eggs from the refrigerator and warm them to room temperature. The easiest way to measure all the ingredients for the pie is with a faceted glass: 250 ml fits into it.

Curd charlotte recipe

To prepare the pie you will need:

  • 250 grams of cottage cheese (you can take low-fat);
  • Apples - 4 pieces;
  • 100 grams of butter;
  • Eggs – 3 pieces;
  • Faceted glass of semolina;
  • Faceted glass of granulated sugar;
  • baking powder – 15 grams;
  • breadcrumbs for sprinkling the pan.

Cut the apples into cubes, add sugar and wait until the sand dissolves. At this time, prepare the dough: mix semolina, eggs and cottage cheese (to give the pie a delicate consistency, it is better to rub the cottage cheese through a sieve).

Lastly, baking powder and melted butter are added to the dough. The baking dish is lined with paper, greased with butter, and sprinkled with breadcrumbs. Bake cottage cheese charlotte with apples until golden brown. This simple and delicious pie will definitely please your household.

Grandma's charlotte. Cooking recipe

This pie uses a lot of apples and little flour, and the dough is lifted by baking powder. Charlotte, according to my grandmother’s recipe, turns out to be different from other pies, a little dense and moist, and it is better to serve it warm. By the way, the pie turns out to be less calorie due to the lack of oil, low flour content and a large amount of fruit. Therefore, fans of all kinds of diets can enjoy a simple charlotte with apples according to grandma’s recipe.

You will need:

  • One or one and a half kilograms of apples;
  • Eggs – 3 pieces;
  • A glass of granulated sugar;
  • Half a glass of flour;
  • Juice of one lemon;
  • Soda – ½ tsp.

Preparation

Cut the apples into slices and sprinkle with lemon juice. Beat eggs with sugar, add flour. Quench the soda with lemon juice, mix the dough with apples. Pour the mixture into the bottom of a greased and breadcrumbed pan. The charlotte is first baked at 220 degrees until it acquires a light brown color. Then the oven temperature is lowered to 180 degrees and baking continues for another 15 minutes. Check the readiness of the pie with a skewer: there should be no remaining dough. If the pie is damp, simply cover it with foil on top, turn off the flame and keep it in the oven until done.

Diet charlotte recipe

People who are losing weight sometimes show miracles of ingenuity and come up with original recipes to maintain their figure. To reduce the calorie content of the pie, oil is not used to lubricate the pan, and saccharin is used instead of sugar (it withstands heat well and also retains its properties well in an acidic environment). This substance is 450 times sweeter than sugar, so it is better to take a smaller amount. To prevent the dough from sticking, the bottom of the mold is simply lined with baking paper.

Ingredients:

  • 4 chicken egg whites;
  • Half a glass of sugar;
  • 12.5 tablespoons without a slide of small oat flakes;
  • Large apples - 2 pieces;
  • 1/3 cup flour;
  • A little lemon juice;
  • Powdered sugar for dusting the cake.

Preparation

Cut the apples into slices or cubes. Beat the egg whites until stiff, gradually adding sugar. Using a wooden spatula, carefully add flour to the protein mass, kneading in one direction. Oatmeal is added last; it makes the dough for diet charlotte quite thick.

The bottom of the mold is lined with paper and sprinkled with breadcrumbs. Place apples in a circle and sprinkle them with lemon juice, pour in the prepared egg-oat mixture. The baking time for charlotte is about 20-25 minutes at a temperature of 180 degrees. After this, the flame is turned off, and the cake is left to bake in the oven for another 5 minutes.

Before removing the diet charlotte, it should be cooled slightly, and then simply shaken out onto a wooden board and sprinkled with powdered sugar.

History of the pie

There are several versions of the origin of charlotte. According to one of them, the pie was named after the wife of King George III of Great Britain; she made a lot of efforts to preserve apple orchards and patronized the producers, and her name was Queen Charlotte. As a token of gratitude, the loyal subjects prepared a simple apple dessert and named it after the English queen. Initially, “charlotte” was made without baking with pieces of bread and fruit soaked in berry syrup.

According to another version, charlotte was invented by the French chef Marie Antoine Carême, who prepared a sweet pie with a creamy sauce and used sponge cake instead of bread. They say that Russian Tsar Alexander I liked Karême’s baked goods so much that he wanted to take the French chef with him to Russia.

The third version of the origin of charlotte is the most romantic. In ancient times, there lived a cook in France who was hopelessly in love with the beautiful Charlotte. Love inspired the young man to create a wonderful dessert, which was named after his beloved girl.

Apple pie fans can choose whichever version they like best. Nevertheless, charlotte with apples remains a favorite dessert among our compatriots. Try one of the following simple recipes. What if this dessert really has the magical power of lovers?

Lush, tender and simply melting in your mouth charlotte is impossible not to like! This sweet, apple dessert comes from Germany. It has long conquered everyone with its simplicity and unforgettable taste. Every real housewife should be able to cook it. You can use the following win-win recipes.

  2. Beat the mixture with a kitchen mixer at low speed. Beat briefly until smooth;

  1. Apples must be peeled, cut out the middle and cut into not very thick slices or cubes. Then mix the dough with chopped apples;

  1. Pour the batter into a buttered baking dish. Place in an oven preheated to 180 degrees and bake for 40–45 minutes. In particular, the height of the container changes the baking time; the higher the shape, the longer it takes to cook, and vice versa. You can check readiness using a wooden knot or toothpick. Secrets of a successful Charlotte

Charlotte is a simple dish; they say that even a child can cope with its preparation. But there are some subtleties and secrets that will help make it even tastier.

  • Antonovka is considered the best variety of apples that reveal their maximum flavor when baked. They are very fragrant. Their sourness perfectly complements the sweet charlotte biscuit.
  • The more fluently the egg mixture is beaten, the fluffier the cake will be.
  • You only need to place the dough in a well-heated oven to the required temperature. This is very important. Thanks to this, the pie will not only have an appetizing crust, but also a baked center.
  • Under no circumstances should you look into the oven while cooking. Charlotte does not like drafts and temperature changes; they cause her to settle.
  • Initially, it was necessary to bake in a cast iron frying pan; this contributed to the appearance of a beautiful golden crust of the pie.
  • Adding lemon or orange zest, cinnamon, vanilla sugar, honey or cocoa to the dough will make the pie more interesting and unusual. Don't be afraid to experiment. You can add almost anything. It could even be cardamom or nutmeg.

Charlotte goes great with tea or coffee. It can be consumed as a completely independent dessert. Serving charlotte, to some extent, is also an art. The tastiest thing is a freshly baked pie, it is warm and aromatic.

It is ideal to serve charlotte with a scoop of light creamy ice cream. If you sprinkle a little powdered sugar, the cake will become even more attractive and appetizing. Charlotte and sour cream have a particularly harmonious combination. There are many variations, you just need to use your imagination.

Bon appetit!

They say that charlotte became widespread in Europe due to the availability and cheapness of apples. They also say that it arose from the need to utilize the remains of the apple harvest that could not find any other use. But honestly, only boring theorists can say that, unable to notice the divine caramel pleasure into which every piece of apple pulp turns when baked in dough! Are there really such people? - you ask. We answer: there are none... but sometimes they do, if they have just had breakfast with a piece of this same pastry and are in an excellent mood, which inclines them to theorize.

As often happens, modern charlotte has little in common with its historical ancestor. Even its version, which came to the table of Alexander I in the 19th century from the hands of the French chef Marie Carême and was called “Russian” throughout the world, was not a sponge apple pie, but a dessert made from ready-made sponge cake and Bavarian cream.

Charlotte history

It is more correct to divide the history of Charlotte into two parts. The first one is related to the European culinary tradition, and the second one is related to the Russian one. What follows from this? Absolutely nothing. History has turned everything upside down and powdered it so much, covered up its tracks so much that it is of exclusively encyclopedic interest, and very little of practical interest. But first things first.

History one, European

First there was the pudding.

The peculiarity of the pudding is that it is prepared and then cooled in the mold, and when served, when the pudding is turned over onto a plate, it remains an impression of the container in which it solidified.

This simple method of giving a beautiful shape to a dessert was used by someone (they say, the wife of George III, Charlotte) in a rather original way: bread soaked in egg mixture was placed in a mold, sandwiched with boiled apples and baked.
In Europe, this version of charlotte is still alive and popular, and with the beginning of the apple harvest, a new season of charlotte apples begins.

Bread charlotte pudding

Another charlotte with bread instead of flour

The second story, Russian

Charlotte is not a grandmother.

In the 19th century, while in the service of Alexander I, the king of chefs and cook of the most eminent people of that time, Marie-Antoine Carême, created his next culinary masterpiece, filling Savoiardi cookies with Bavarian cream. The result was a very successful cold charlotte with apples, which quickly became fashionable and popular. Soon Karem's charlotte crossed borders between countries (and even continents) and eventually became entrenched in the world culinary tradition under the name “Russian charlotte”.

It is curious that both versions of preparing charlotte were known in Russia, but each dish went through its own evolutionary path. A dessert made from bread and apples was in incredible demand until the 30s of the last century, not only among family cooks, but also among chefs of famous restaurants, but in the second half of the 20th century, charlotte pudding practically disappeared in the Soviet Union. Culinary historian Pokhlebkin believes that the recipe lost its relevance after World War II “due to the disappearance of molds with a removable bottom, without which cooking the dish in its classic form is impossible.”

The Russian charlotte Karema was subsequently renamed apple babka, but did not gain widespread popularity. The name “charlotte” remains in everyday use, but it is used most often in relation to modern apple pie, which will be discussed further.

Charlotte with savoiardi and Bavarian cream in Europe today is more often prepared with berries. But this is the same Karem recipe.

Modern Charlotte

If you have ever looked for charlotte recipes on the Internet, you have probably come across a sponge cake with pieces of apples inside, and in the descriptive part they contain the words: “charlotte, like in childhood,” “according to grandma’s recipe,” or “the simplest classic charlotte recipe.”

Charlotte in the modern sense is a pie with apples, usually quick, most often biscuit.

This suggests that the memory of that very, real and classic one has been lost, and the name has quietly migrated and stuck around the modern dessert with apples. Even moreover, the sometimes found recipes for bread charlotte are considered as derivatives of the “modern classic” and are called quick charlotte.

Further we will not delve into the complex intertwining of the destinies of popular recipes and culinary terms, but will move on to the practical part - tips, secrets and recipes for preparing different versions of apple pies.

The fruit part and its place in the pie

Our entire previous conversation implied apple charlotte, but in fact, the fruit part of this dessert can be anything and as a filler you can take not only apples, but also pears, bananas, plums, strawberries - in a word, all those fruits and berries that are not will change the quality of the test for the worse.

However, these will be more recipe upgrades than charlotte in the truest sense of the word, because only pears are close to the characteristics of apple pulp, and the structure of the fruit additive plays a primary role in the taste of charlotte. What follows from this? Here's the thing: you can and should experiment, but in important cases, don't forget about apples - after all, the apple version is guaranteed not to let you down.

Where should the apple layer be?

Anywhere. More precisely, there are 4 options for placing apples: either you place them on the bottom of the mold, or mix them with the dough, or place them on top, or make a very apple charlotte, combining the three previous options. You are not limited by any limits, but depending on the position of the apples, the results will differ.

  • In the first case, when the apples are at the bottom, they come into contact with the hottest part of the mold and, while in the oven, become heavily caramelized and sometimes even slightly burnt.
  • In the second case apples are in the thickness of the dough, the temperature here is much milder than in the oven itself, so they simply soften and resemble baked ones.
  • And in the third case apple pieces not covered with dough, so they are not so much baked as they are dried out and fried, and accordingly, they become thinner and less juicy.

Charlotte dough

Biscuit dough

In the modern version in our region, the classic dough for charlotte is a sponge cake. Moreover, the sponge cake is quick, without separating the eggs or beating the whites separately.
You could even say that the most common charlotte recipe is incredibly simple: 2-3 eggs, a glass of sugar, a glass of flour and an arbitrary number of apples. But the quantity of ingredients still does not completely determine the result - the cooking technology is also important.

The most common recipe for charlotte with apples is incredibly simple: 2-3 eggs, a glass of sugar, a glass of flour and an arbitrary number of apples.

Common mistakes in preparing sponge apple charlotte:

  1. Eggs are not well beaten with sugar. The sugar did not have time to dissolve and settled to the bottom during baking. As a result, the dough fell, and a dense, burnt sugar layer formed at the bottom of the cake. Approximately the same result will occur if too much sugar is taken.
  1. Taken sour, hard, unripe apples. The baking time of the dough is not enough to cook these apples and they remain half-baked in the pie.
  1. Apple pieces are sweetened with sugar before being added to the dough. During baking, the sugar melts, mixes with apple juice, the dough around the apples becomes limp and after baking these places become wet and sticky. The exception is when the apples are on top of the dough. In this version, you can lightly sprinkle them with sugar - this will prevent them from drying out, the apples will bake better and be more juicy.

Shortbread dough

Speaking of charlotte on shortcrust pastry, we are approaching a slightly different category of baked goods - fruit pies. For example, the very famous French pie “Tarte Tatin”, which is baked “inside out” with the apples facing down, in principle could also be called shortbread charlotte, because our dessert includes so many different options that it is impossible to draw clear boundaries.

And yet, if we talk about terminology, charlotte is rather soft than sandy, and rather contains the fruit part inside than outside, although you can find different names for both, and to illustrate this below we will also give a recipe for shortbread charlotte.

Charlotte recipes

Helpful notes for the recipes below:

  1. The quantities of ingredients are indicated taking into account that the pie is being prepared for a family of four. To prepare the pie for guests, double this amount and use a large baking sheet as a baking dish. In this case, it can be cut and served as cakes, decorating each plate with a sprig of mint, a couple of drops of jam or liquid preserves (for a beautiful contrast, take red or orange jam, for example, from dogwood or quince) and a pinch of powdered sugar.
  1. All types of charlotte (except bread, which is served warm) are good both hot and chilled.
  1. If the apples are laid out or visible on the surface of the pie, sprinkle them with powdered sugar immediately after baking. The heat will melt the sugar, leaving a slight sweetness. Pies are not sprinkled with granulated sugar because it does not dissolve and spoils the taste with a sandy crunch.
  1. You can add one or more tablespoons of cocoa to any dough to get a chocolate charlotte (but do not forget that cocoa powder slightly thickens the dough). It is appropriate to decorate a chocolate cake with chocolate filling.
  1. When preparing charlotte from shortcrust pastry, be sure to punch it with a fork, including the sides, at the stage when you are just putting the future pie in the mold.
  1. It is better to store charlotte for no more than a day and, optimally, in a paper bag.
  1. They eat charlotte with a dessert fork. Well, if you are a child, then using a spoon is fine.

Classic charlotte with apples

Classic charlotte (and this is the most popular option) is loved in many families, and for growing housewives it often becomes the first baked goods they make themselves, because the recipe is very simple.

Ingredients:

  • eggs 3 pcs.
  • sugar 1 tbsp.
  • flour 1 tbsp.
  • lemon juice a couple drops
  • vanillin on the tip of a knife
  • salt a pinch
  • pinch of cinnamon (optional)
  • cognac 2 tbsp. l. (optional)

How to cook classic charlotte
Start by preparing the apples. Remove the core and cut them into pieces. Pour into a container, add a couple of tablespoons of cognac and cinnamon, stir and leave covered for half an hour. These additives will give the charlotte an exquisite aroma, and there is no need to worry about little pie tasters - the alcohol will evaporate during baking.

Immediately before starting to prepare the dough, turn on the oven to 180 °C. Take the eggs and break them into a container convenient for beating. It is not necessary to separate the whites from the yolks - a fairly fluffy dough can be obtained without these unnecessary manipulations. Add a glass of sugar to the eggs and beat them with a mixer until the mixture is light brown. Only now add flour to the dough in small portions until the consistency of medium-fat sour cream (if necessary, you can add a little more flour) and stir until the dough lightens. This is the secret of a lush charlotte.

Add a couple of drops of lemon juice to the mixture to dilute the smell of eggs. A pinch of vanillin will enhance the aroma even better.

Now mix the dough with apples, pour into the prepared pan and put in the oven for half an hour. We check readiness with a long wooden stick or toothpick in several places and always in the center.

As a note to the most popular recipe, we’ll make one more small reservation: charlotte is a universal pie, it can be served both for family tea parties and for guests, so the way you add apples is important not only from the point of view of their taste after baking (which we mentioned above ), but also in an aesthetic sense.

Charlotte with a layer of apples placed directly on a baking sheet and filled with dough is very tasty, but it is difficult to keep it beautiful when removed from the baking sheet. At the same time, placing apples on top of the dough in the form of circles, rosettes or the most intricate patterns, and after baking, sprinkling the charlotte with powdered sugar, you can easily get a beautiful holiday pie.

White bread charlotte with apples and cheese

And here is our real forgotten classic charlotte, or rather, part of the classic recipe in the form of using dried bread instead of dough, and a savory addition to this recipe in the form of hard cheese.

This option is certainly economical and fast. It also turns out very tasty, in principle, no worse than sponge cake. Well suited for those occasions when you need a hearty meal, but there is no time left for pickles.

Ingredients:

  • dried white loaf 0.5 kg
  • apples 2 large or 4-5 small
  • eggs 3 pcs.
  • sugar 200 g
  • milk 1 l
  • hard cheese 150 g
  • vanilla pinch
  • salt a pinch

How to cook:
The drier the loaf, the tastier the pie will be. Moreover, many nutritionists have repeatedly said that eating bread on the second or third day is healthier than fresh bread (however, in our country it will be baked again and it is unlikely that nutritionists were asked for an opinion on such an exotic option).

  1. So, take the dried loaf and break it into small pieces. If this is difficult to do with your hands, we use any available means (grater, food processor).
  1. Prepare the apples: peel the core (no need to cut off the skin), chop into pieces. For this charlotte, it is convenient to cut the apples into cubes with a side of about a centimeter. Grate the cheese on a coarse grater.
  1. Place in a mold (it is very convenient to bake such pies in a silicone mold). The layers should be in this order: bread layer, cheese layer, apple layer, bread layer again, cheese layer, apple layer. The last layer must be the bread layer. Try to lay out the layers so that the bread “envelops” the apples, then the pie will turn out strong and beautiful in cut.
  1. In a separate container, beat milk, eggs, a pinch of salt, vanillin and sugar until smooth and slightly brownish in color. Pour this mixture over the prepared pie and press firmly on top with your palms.
  1. Preheat the oven to 220°C and place the mold in it. As soon as a brown crust appears on top of the pie, reduce the heat and bake for another 15 minutes.

Jellied strawberry charlotte

We took this recipe for our selection because, firstly, it is a representative of the “non-apple” charlotte, secondly, it is very festive and, thirdly, it is somewhat reminiscent of the same version of Karem’s charlotte that the famous chef prepared for Tsar Alexander.

Despite its unusual nature, this pie is quite easy to prepare.

Dough ingredients
eggs 2 pcs.
sugar 200 g
flour 200 g (the exact amount is determined by the type of dough)
strawberries 0.5 kg
butter 100 g
vanilla pinch
salt a pinch

Cream ingredients
sour cream 300 g
sugar 200 g
flour 3 tbsp. l.
eggs 3 pcs.
vanillin on the tip of a knife

Cooking time
40-45 minutes

How to cook jellied charlotte
To prepare the dough, the butter is not softened; on the contrary, it must be cold and amenable to cutting. Grate the butter on a coarse grater and mix with your hands with sugar, flour, vanilla and a pinch of salt until smooth and strong. Set aside in a cool place for half an hour.

Now prepare the cream filling. We will add the eggs at the last moment, and first put the sour cream in the container, let it sit for a while at room temperature (fat content is not very important), beat it with flour, a pinch of vanillin and a glass of sugar until smooth. Now add the eggs and beat thoroughly.

Place the dough in a prepared baking pan (preferably silicone), spreading it evenly over the entire surface so that it rises slightly (5-7 millimeters) on the sides, forming sides. Place strawberries in the resulting basket, cut or whole if the berries are small. Pour egg cream over the berries and place in a preheated oven (180 °C) for 40-45 minutes.

Charlotte on kefir with apples and cottage cheese

The last recipe in our selection is charlotte with kefir. Strictly speaking, the dough in it is not entirely kefir, because the presence of butter already transfers it into the category of more “noble” types of dough, and cottage cheese into the category of specific ones.

However, kefir dough is an option for fluffy charlotte. Lactic acid actively interacts with soda and such dough always rises well if the correct proportions of flour and liquid are maintained.

Let us also remind you that the charlotte does not have to be apple: bananas, durum pears, rhubarb, raspberries, peaches are all also good options for filling.

Ingredients:

  • kefir 300 ml
  • sugar 150 g
  • butter 80 g
  • half a teaspoon soda
  • flour 3 tbsp.
  • eggs 3 pcs.
  • apples 2 large or 4-5 small
  • cottage cheese 300 g
  • salt a pinch
  • vanilla pinch

Prepare the cottage cheese. It should be free of lumps, with the consistency of the curd mass in baby food (it is best to beat the curd with a blender or chopper in a food processor, but you can also thoroughly grind it with a fork). In a separate bowl, beat eggs and sugar until light brown and thick foam. The butter needs to be softened, added to the beaten eggs and beaten again. Add soda, salt, vanillin, cottage cheese, kefir and flour to the mixture. The resulting dough should resemble strong sour cream (if it turns out thinner, add flour in excess of the specified amount).
Chop the apples and place them on the dough, pressing a little.

The cake will bake for 45 minutes at 180°C, and another 15 minutes at 160°C.

Multicooker and traditional recipes

We will not give a separate recipe for a multicooker, because a multicooker is not a miracle machine that can give some completely new result, but just a compact electric oven complete with a non-stick pan when it comes to baking. Summing up, I would like to return once again to the undeservedly forgotten bread charlotte. After all, this is a dish in the preparation of which the cook can safely show all his creativity and imagination, being practically insured against failure.
