Varenets: what is it? Useful properties of fermented milk product and recipes. Varenets - benefits and harms When is the best time to eat Varenets

Varenets is a separate type of fermented milk product, very similar to fermented baked milk. For its preparation, high-quality baked milk and sour cream are used. This drink is well absorbed by the body and has a pleasant taste. Traditional Varenets was originally prepared in a clay pot in an oven. Today, an identical recipe is used by the peoples of Georgia, Turkey and Armenia.

What it is?

To get a classic thick drink, fresh cow's milk is baked in the oven at low temperature. Under such conditions, it loses half of its own volume, and the milky shade changes to pinkish coffee. An important feature is the acquisition of a special aroma with a slight haze.

The drink is made fattier and more nutritious by adding cream and fermenting it with sour cream. Varenets prepared at home is so thick and smooth that you can eat it directly with a spoon.

The industrial product is prepared a little differently. Fermentation is achieved with streptococcal bacteria. They are added to the melted cooled mixture. It is this milky environment that allows them to multiply intensively. By the way, sometimes fermented baked milk is used as a base, because it is suitable in terms of taste and nutritional qualities.

Homemade thermostat drink follows the same recipe. To do this, it is best to use home-made milk as the main ingredients, and if you choose purchased milk, it should be high in fat. And as the second component - a small amount of sour cream.

To prepare baked milk, use an oven or thermos. The cookware should have thick walls and a bottom; for example, cast iron is perfect. Next, all this is sent to an oven preheated to 160 degrees for five hours. If you choose a thermos, add hot milky liquid and leave for 15 hours.

The use of a multicooker is allowed. Having set the “Stew” function, pour milk into the bowl and leave for 5 hours. Be sure to cool the liquid before finishing.

For 0.5 liters of baked milk there are 100 g of sour cream. Next, the clay pot (or any other container) is closed and infused for several hours in a warm room.

Composition and calorie content

The energy value of a fermented milk product depends on its fat content. 100 grams of a 2% thermostatic drink contain 50 calories, including 2.8 g of protein, 2.5 g of fat and 4 g of carbohydrates. The BJU ratio is presented as 4: 3: 1.

Varenets is produced in several forms: 1, 2.5, 3.2, 4 and 6%. Each percentage of fat adds 4-5 calories, so there is no significant difference in value.

The composition of the drink is rich in many nutrients - vitamins, minerals, fatty acids, which an adult and growing body needs. An important feature, of course, is the presence of fermented protein, which is quite easily absorbed by children, adults and the elderly.

How is it useful?

Unlike regular cow's milk, Varenets is absorbed much better. The valuable substances in the product, first of all, have a positive effect on the state of the intestinal microflora. This process occurs with the help of bifidobacteria and lactobacilli, which prevent fermentation in the stomach. It is important to note that regular consumption of the drink helps strengthen the immune system, which is necessary in the fight against colds and infections.

In addition, Varenets has other beneficial properties:

  • the functioning of the gastrointestinal tract is improved;
  • the nervous system is strengthened due to the high phosphorus content;
  • The calcium contained in the drink makes bone tissue, teeth and nails strong;
  • normalizes muscle activity and also restores overall tone after physical activity;

  • the cardiovascular system is strengthened;
  • the product does not cause an allergic reaction.

Contraindications

Despite the fact that Varenets is considered a very valuable food product, it has some contraindications for consumption. First of all, it is worth remembering the daily norm of the drink. Excessive amounts can cause significant harm to your health.

In addition, it is important to use only natural and fresh products. Fermented milk that has expired is very dangerous for the body.

It is necessary for people with allergies and individual lactose intolerance to exclude Varenets from the diet. This substance, as a rule, is found in cow's milk in large quantities.

In addition, so-called flatulence, that is, bloating and increased gas formation, may be observed. A similar case is possible with lactose deficiency, as a result of which the fermented milk drink is practically not digested by the human stomach.

Features of use

Before you include a traditional dairy product in your daily diet, you should choose it correctly. When buying a drink in a store, pay attention first of all to the expiration date. Although fermented milk products have a long shelf life, even the most minor violations of conditions can deprive them of basic nutritional and taste qualities. Therefore, it is important that the storage of Varents does not exceed two weeks. After you have opened the package, pour the drink into a glass bottle or jar - this will keep it fresh longer. But it is best to warm it up before use.

As for appearance, fresh Varenets is cream or yellow in color. It is important that the original name “Varenets” is visible on the package (box) with an indication of the nutritional and energy value. Read the ingredients carefully - the natural drink consists only of cow's milk and sourdough. If you notice additional ingredients and flavorings, it means that you have a drink based on dairy products.

Real Varenets is characterized by a pronounced taste and smell of sour milk. The consistency is homogeneous, very thick. There should be no bubbles or clots.

Homemade Varenets, made from natural ingredients, is recommended to be stored in the refrigerator no more than 5 days. Storage at room temperature requires exactly one day.

A nursing woman is very attentive to her own health, as everything is reflected in the taste and benefits of her milk. The baby, feeding on mother's milk, takes on everything that the mother received.

Before use, it is necessary to consult a specialist to determine whether the mother and child are allergic to lactose and animal protein.

By drinking the drink while breastfeeding, the body and, therefore, mother's milk is saturated with vitamins, minerals, protein, fats and a large amount of calcium, which a newborn needs.

Today, so-called mono-diets, which involve eating foods of one category for a certain amount of time, are very popular among women. Varenets is no exception. Many people prefer to drink it throughout the day, thereby limiting themselves to solid foods. Some people combine it with vegetables and fruits, and do fasting days with only one drink.

Some nutritionists claim that all fermented milk interferes with the process of losing weight, supposedly they contain certain substances that inhibit fat burning.

A common problem associated with consuming Varents is eating it with bread and sweets, as well as drinking a large dose of the drink. Although it is a low-calorie product, the additional ingredients add significant calories.

For weight loss, Varenets is indeed an effective and useful component. It is able to saturate and replenish the lack of vitamins that are so lacking during a diet. It would be correct to eat a glass of drink with diet bread (better if it does not contain yeast), berries, and fruits. You can make cocktails or smoothies based on it.

During a diet, it is always important to stick to a certain portion of what you eat. It is known that lactose is milk sugar, but do not think that it will prevent you from losing extra pounds. The amount of such simple carbohydrates in Varenets is kept to a minimum, so this drink is safe and it is recommended to include it in your diet menu.

If you do not adhere to a certain type of diet, it will be very useful to drink a glass of Varents at night. This will have a beneficial effect on the intestines, which, in turn, will affect healthy sleep and morning stool.

The only note may be the fat content of the milk drink. That is, the higher the fat content, the more calories and the BJU ratio. In this case, you should decide for yourself the appropriate product option.

The traditional Russian drink Varenets is a truly tasty and healthy product. Today it can be found in many modern supermarkets in the dairy section next to fermented baked milk and yogurt. It is available in different fat contents and volumes. In this regard, there can be no problems with choice.

Either way, you can always make thermostat treats at home. The recipe that industrial companies use to prepare it has not changed since ancient times. To do this, you only need two components - milk and sour cream. Therefore, you can please your household with tasty and aromatic Varents without much difficulty.

To learn how to prepare Varenets, watch the following video.

Varenets is a fermented milk product made from baked milk and cream. It is thanks to this composition that the final product differs from fermented baked milk. Industrial Varenets is liquid, while homemade Varenets can be eaten with a spoon.

It was prepared back in Rus' in a real oven. Homemade milk was poured into a clay pot and heated in the oven overnight. It was important to ensure that the liquid did not boil, but only simmer. As a result of this procedure, the milk acquired a thick consistency, and when its temperature dropped to approximately 36 degrees, cream was placed in it and left in a warm place for a while.

How does Varenets differ from fermented baked milk and kefir?

Varenets differs from ryazhenka mainly in its manufacturing technology. Varenets, like fermented baked milk, is poured into pots made of clay and sent to the oven. However, cream is added to the first dairy product, and sour cream to the second. Unlike ryazhenka, where the temperature in the oven should not exceed one hundred degrees, for Varentsy the temperature should be no less than one hundred and twenty degrees. From the oven, fermented baked milk is sent to a warm room for ripening, and Varenets, on the contrary, is put away in a cool place.

Also, the difference between fermented baked milk and Varenets is that fermented milk bacteria obtained from yogurt are added to the latter, while fungi are added to fermented baked milk.

Unlike Varenets, ready-made fermented baked milk is fattier and tastes like baked milk. However, Varenets is more beneficial for the body, since it can be classified as a low-calorie product.

Now, as for the differences between kefir and Varents. The second is obtained from baked milk, and the first is from whole cow’s or goat’s milk. Fungi are added to kefir, and bacteria are added to Varenets. But they are both considered healthy dairy products because they are low in calories.

How to select and store?

After opening the package, look at the consistency of the Varents; it should be homogeneous without any clots or bubbles. Otherwise, it is better to avoid using this product.

The shelf life of high-quality Varents should not be more than 2 weeks. From an open package, the fermented milk product must be transferred to a glass jar. It is recommended to heat the Varenets before use.

Homemade Varenets should be in a glass container and stored exclusively in the refrigerator for no more than five days. If a dairy product is left indoors at room temperature, it must be consumed within twenty-four hours.

Beneficial features

The benefits of Varents are determined by the presence of vitamins and minerals that are necessary for life. This product contains vitamin A, which is essential for vision and skin. Varents contains vitamin D, which reduces the risk of osteoporosis and rickets in children. This product also contains ascorbic acid, which strengthens the immune system. Varents contains almost the entire complex of B vitamins, which have a beneficial effect on the functioning of the nervous system and the entire body.

The calorie content of Varents directly depends on the fat content of the raw materials used for its preparation. On average, store shelves sell options with a calorie content of 53 kcal per 100 g. Taking this into account, Varenets can be consumed during weight loss diets, as well as for obese people.

This product contains magnesium and potassium, and these minerals are essential for the normal functioning of the cardiovascular system. Thanks to the combined action of calcium and phosphorus, the process of regeneration and strengthening of bone tissue is activated. Varents also contains iron, zinc, fluorine and a large number of other useful minerals.

Considering the fact that the protein contained in this product is quickly absorbed by the body, it is recommended to use it to normalize the functioning of the gastrointestinal tract and kidneys.

Varenets also has a mild laxative effect, which means it is useful for people with constipation.

Varenets can be drunk while breastfeeding, but only at home, as it will be more beneficial for the body of a nursing mother and child.

For pancreatitis, Varenets is best consumed during the period of remission. During an exacerbation, drinking a dairy product is not recommended. However, if a sick person cannot drink kefir, it can be replaced with Varenets with two percent fat content. It is recommended to drink this product one hundred milliliters a day (preferably as an afternoon snack or a couple of hours before bedtime) two weeks after the last attack has been eliminated.

Below is a video about the beneficial properties of Varents.

How to prepare Varenets at home?

This delicious fermented milk product can be prepared at home using a very simple recipe. So, you need to take 1 liter of milk and 4 tbsp. spoons of yogurt, which will act as a starter. The milk needs to be boiled and poured into a thermos that has a glass flask, since other options do not hold heat for so long. Leave for 12 hours. As a result, you will get baked milk, but you can also cook it in the oven. Our proposed method is better, since the amount of liquid does not decrease.

After time, the milk will become creamy and should be poured into any convenient container. It is necessary to prepare glass jars in advance, which must be clean and dry. Pour yogurt into their bottom and pour milk on top, the temperature of which should not be more than 40 degrees. Then mix thoroughly, close the lid and wrap in a blanket. After 3-4 hours, the contents should thicken, which means the dumpling is ready.

Monitor the time as over-cooked product will become very sour.

Homemade Varenets is in no way inferior to store-bought versions and in most cases turns out even tastier.

Harm of Varents and contraindications

Varenets can cause harm to people with individual intolerance to the product, and therefore it is strictly contraindicated for use in the presence of allergic reactions.

Varenets is contraindicated for people with lactose intolerance. The reason for this is dairy intolerance, due to which a person experiences flatulence and then diarrhea after consuming a dairy product. Therefore, in order not to cause harm to health, you need to consume dairy products in moderation or avoid them altogether, if necessary.

Today, on store shelves there is a wide range of dairy and fermented milk products that are considered essential food products. According to world-famous nutritionists, the inclusion of fermented milk drinks in the diet has a beneficial effect on the functioning of the digestive system of adults and children and the entire human body as a whole.

Among such drinks, a special place is occupied by my favorite products with caramel flavor - fermented baked milk and varenets, prepared on the basis of baked whole milk by fermentation with beneficial bacteria. In consistency and taste, both drinks are similar to each other, and only a sophisticated consumer who understands the nuances of technology will find certain differences between Varentsy and ryazhenka.

Both drinks are similar in taste, since they contain beneficial lactic bacteria, which determine the nutritional value and their undoubted health benefits. Varenets and ryazhenka differ in their production technology - traditionally in Ukraine and the European part of Russia it is prepared by adding sour cream to melted milk at the rate of 0.2 kg per liter, and in Siberia and the Urals thick varenets, which can be eaten with a spoon, is often made on the basis heavy milk cream and serve this dish with tea.

Varenets and ryazhenka: what is the difference?

To prepare both drinks under industrial conditions, cow's milk is melted for 3-8 hours until its volume is reduced by approximately a third. The resulting substance has a reddish tint and a characteristic pleasant taste.

Next, the product is fermented by adding lactic acid streptococci and Bulgarian thermophilic bacillus to prepare fermented baked milk and sour cream or cream to produce Varenets. The fermentation process occurs by maintaining a temperature of about 40°C for 3-4 hours.

In fact, both fermented baked milk and Varenets are a type of natural Bulgarian yogurt, but without any flavoring additives. In the old days, to prepare Varenets, they took special clay pots, which were placed in a Russian oven to simmer the milk overnight. The finished product is much lighter in color than fermented baked milk.

Another significant difference between Varenets and ryazhenka, especially when prepared at home, is its increased thickness and calorie content due to the presence of fatty sour cream or cream. The energy value of ready-made Varents is about 53 kcal, and homemade - up to 100 kcal/100 g of product. And based on the composition, it is believed that Varents contains much more phosphorus, and fermented baked milk is a product rich in calcium.

A tasty and nutritious varenets, the homemade recipe for which I will describe in detail below, will not be difficult to prepare on your own, since almost every housewife has modern kitchen appliances at her disposal - a multicooker and a yogurt maker, so it is not at all necessary to have a Russian stove in an apartment or private house. But first, let's look at the biochemical composition and beneficial properties of the product.

The benefits of Varents for human health

Like all fermented milk drinks, Varenets is classified as a dietary product recommended for therapeutic and preventive nutrition of patients with gastrointestinal problems. Why is Varenets so beneficial for health, besides its beneficial effect on the digestive organs? All biologically active components of the product are in a form bioavailable to the body.

We are talking about easily digestible proteins responsible for building muscle tissue, calcium, beneficial for the health of bones and teeth, vitamin D, necessary for the prevention of osteoporosis and brittle bones, B vitamins, ascorbic acid and retinol, without which not a single physiological process can do. The presence of lactic acid beneficial bacteria allows you to maintain the balance of intestinal microflora, in which cells of the immune system live.

Varenets has a mild laxative and diuretic effect, so it is indispensable for people prone to constipation, as well as for obesity, as it allows you to get rid of fecal debris and increased tissue swelling. According to nutritionists, you can spend protein fasting days on Varents, allowing you to reduce body weight from 1 to 3 kg by cleansing the body and activating metabolic processes.

The product has also proven itself well in home cosmetology. Applying masks based on pure Varenets to the face and hair or in combination with other products promotes rejuvenation, cell regeneration, increased hydration, tightening of the oval and high-quality nutrition of the epidermis and the entire head of hair. Try wrapping your hair in Varenets 1 hour before washing, and you won’t recognize your curls, which will become silky, smooth and manageable.

Cooking Varenets - recipes for home

Every housewife, if desired, can prepare Varenets at home. To do this, you will need country milk, which is much healthier than store-bought pasteurized milk, and a minimum amount of patience.

First you need to melt the milk. For this purpose, you can use an oven (the milk is simmered for 6-8 hours at a temperature of no more than 130°C, preferably in a clay pot), but it is most convenient to heat it in a slow cooker.

Pour 1 liter of milk with a fat content of 2.5 to 3.2% into the bowl of the device (the fattier the milk, the tastier the finished product), close the lid and steam release valve, set to the “Chef”, “Multi-cook”, “Simmering” mode. or “Stewing” (the choice of mode depends on the characteristics of your kitchen assistant and model).

  • Set the time to 6 hours. During this period, at a temperature of 95°C, the milk will decrease in volume, acquire a delicate creamy hue and an amazing caramel taste.

Next, the baked milk is cooled to a temperature of 35-40°C (not higher, since higher temperatures lead to the death of beneficial bacteria). Place 2 tablespoons of sour cream or natural yogurt in a sterile and dry jar (I tried both options, I liked the Greek yogurt dumpling better) and pour in baked milk.

The container is kept near the battery, carefully wrapped in a thick blanket, for 3 hours. If you have a yogurt maker at home, the process is simplified, since this device automatically maintains a temperature of about 38°C. The finished Varenets is stored in the refrigerator, but no more than 3 days.

Here is such a simple technique.

Try to master the recipe for making Varenets at home, and you will forever become an ardent fan of this delicious and healthy drink. It is drunk in its pure form, and various tasty treats are also added, for example, ground cinnamon, natural honey, jam, frozen berries, fruit syrups, sweet crackers, etc. Varents makes excellent baked goods and pancakes. Good luck with your culinary experiments!

Baked milk is made by slowly cooking the raw product. This process continues until the volume of raw milk is reduced by a third and the product acquires a creamy color. Our great-grandmothers cooked it in clay pots placed in a Russian oven and left to simmer for a long time. If the milk was overcooked in the oven, then a certain product was obtained, which was called Varenets. Like baked milk, it brought undoubted benefits to those who drank it regularly.

Today's Varenets is classified as a fermented milk product and is recommended for consumption in the spring, as it improves immunity. The current Varenets is prepared somewhat differently than before: cow's milk is heat treated and fermented. The result is a thick liquid with a delicate sour taste that perfectly quenches thirst and brings considerable benefits. The beneficial properties of Varenets have made it a very famous and widely used product.
